Meat balls "Bear Researcher Style" with rice

Ingredients:

  • 400g minced meat (moose, cow, sheep, bear)
  • 800 ml grinded tomatoes
  • 1 small onion
  • 1 carrot
  • garlic
  • 2 spoons olive oil
  • Vegetable stock
  • oat flakes
  • 1 egg
  • basil
  • salt & peppar
  • leek
  • celeriac
  • squash
  • 3 cups of rice
  • 1 small slice of butter
  • 6-7 cups of water

Do like that:

Warm the olive oil gently in a big pot. Cut both onion and garlic in small cubes and add to the oil. Stir. Roast for one more minute. Add the mashed tomato, sliced leek, Grind celeriac and carrot and add into the pot. Mash the mincd meat with two or three spoons of oak flakes, salt, peppar and egg (as variation you can add parsley, too). Make small balls from the mass and add directly into the pot. While this is boiling gently you can prepare the rice. Melt some butter in a pot, add the rice and stir until it is starting to brown. Add 6-7 cups of same size into the pot with the rice and some salt. Let boil on low heat, preferably with a lock. Now you can add about 250 ml of vegetable stock to the meat balls and add basil. Add salt and peppar. Finally you can slice the squash into the sauce with the meat balls. When the water has disappered totally the rice should be ready.

Raspberry muffins

Ingredients:

  • 100 gram of butter or margarine
  • 200 gram of sugar
  • 300 gram of flour
  • 4 eggs
  • 1 teaspoon of baking soda
  • 2 teaspoons of vanilla sugar
  • Raspery marmelade (home made is best)

Prepare like this:

Have the butter / margarine at room temperature , alternative put 15 seconds into the micro wave oven. Mix butter, sugar and eggs with an elctric hand stirrer in a suitable bowl untill it is a lean and homogen mass. Mix the flour with vanilla sugar and  baking soda and add carefully to the mass while stirring. Now add fat to the muffin form (in case this is needed) and fill in the mass. Put a teaspoon (a huge one) of raspberry marmelade on top in the middle. Bake at 185 degrees for about 20 to 25 minutes. Enjoy!

Swedish cookies: "Havre flarn"

Ingredients:

  • 75 gr of butter or margarine
  • 1 dl of oatmeal
  • 1 dl of wheat flour
  • 1 dl of sugar
  • 1,5 tablespoons of milk
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of vanilla sugar
  • strawberry marmelade (if liked)

Do like that:

Set the oven to 200 degrees C. Have the butter or maragrine at room temp or put shortly into the microwave. Put all ingredients together (but not the strawberry marmelade) into a bowl and mesh for 2 minutes. Take a baking plate and put baking paper onto. Put half of a tablespoon for one cookie on the baking plate. Leave good distance in between the cookies, about 5 cm to each other. If you like, put some strawberry marmelade on the cookie mass before baking.

Bake for about 5 minutes one baking plate at once. Take the cookies away from the baking plate immediately and let them cool down for some minutes on a plate.
